Cumin has a distinctive bitter taste and a strong smell and sweet thanks to the high oil content. It is associated mainly to Indian cuisine. These are also known as kala jeera or shahi jeera. Black Cumin Seeds are smaller and thinner than regular cumin seeds and are much darker in colour. They give a stronger, slightly smoky flavour that provides more depth in cooking and are used sparingly.
